Our menus are built around seasonal produce grown on the farm, locally raised meats, heritage grains, and simple food done exceptionally well. Ahead of our full opening in October, we’re starting small, deliberately. For the next few weeks, join us Tuesday, Wednesday, and Thursday evenings for a smaller, evolving bistro menu, a full bar, and a first taste of The Tavern.
Our menu is rooted in what’s grown and raised at Liberty Farms, alongside ingredients from the wider Hudson Valley. It will change as we go, with more to come as we move toward our full opening.

Food + Drink
The Space
Set along Route 66 in Ghent, The Tavern at Liberty Farms brings new life to a long-standing roadside tavern that had sat quiet for years.
The building has been thoughtfully reworked from the ground up, transforming a once-forgotten roadside spot into a warm, welcoming space designed for both casual evenings and celebratory gatherings.
The main dining room seats around 50 guests and is home to our Sunday Roast service. In the adjoining pub, guests can pull up a seat at the bar, settle into smaller tables lined along a long cushioned bench, gather around the communal farm table, or sink into a pair of leather armchairs for a more relaxed meal or drink. The smaller tables can easily be combined for larger groups, making the space just as suited to an impromptu drink as it is to a longer dinner with friends.
At the heart of the kitchen is a custom-built rotisserie, designed specifically for The TAVERN, where multiple meats and vegetables can roast simultaneously - shaping many of the dishes that define the menu.
Both spaces are also available for private dinners, rehearsal gatherings, and larger celebrations.

Liberty Farms has spent decades building a working farm rooted in responsible agriculture. The Tavern extends that vision, creating a place where produce grown and animals raised at Liberty Farms can be enjoyed in a more everyday setting. Mark’s long-term vision is to create stronger connections between farming, food, and hospitality in the Hudson Valley.
Tom Ellis
Tom brings decades of experience across restaurants, bars, hotels, and large-scale events. He is the founder of The Swell Party, known for wood-fired cooking, whole-animal roasting, and large-format dining experiences rooted in exceptional ingredients and warm hospitality. At The Tavern, Tom has helped shape the menu, service style, and overall guest experience, creating a restaurant built around generous food, great ingredients, warm hospitality, and consistency.
